When to plant
Plant in spring after last frost. Oregano is a perennial herb that returns each spring in zones where winters stay above -10°C. It's drought-tolerant in summer and generally undemanding — one of the easiest herbs to grow.
Soil & site
Oregano thrives in well-drained, average to poor soil — overly rich soil reduces the concentration of aromatic oils. pH 6.0–8.0. It tolerates dry, rocky conditions that would stress most plants. In containers, use a gritty, well-draining potting mix.
Feeding
Minimal. A light application of balanced fertilizer in spring is typically sufficient for the whole season. Rich feeding makes the plant grow fast but with less intense flavour.
Common problems
Root rot from waterlogged soil — the main cause of death in oregano. Spider mites in hot, dry conditions. Aphids on new growth in spring. In humid climates, watch for botrytis (grey mould) — improve air circulation.
When to harvest
Oregano is most aromatic just before it flowers. Harvest when stems are 15–20 cm long. The small oval leaves should be deep green and intensely fragrant when rubbed. For the strongest flavour, harvest before flower buds open.
How to harvest
Cut stems back by one-third just above a leaf node — this encourages bushy regrowth. Never harvest more than half the plant at once. In the fall, cut plants back to 5–8 cm to encourage fresh spring growth. Oregano regrows vigorously from even hard pruning.
Storage & use
Air-dry oregano by hanging bunches upside down in a warm, dry spot for 2 weeks. It dries excellently and actually intensifies in flavour when dried. Store dried leaves in an airtight jar for up to 3 years. Fresh oregano keeps 5–7 days in the refrigerator wrapped in a damp paper towel.
