When to plant
Plant in early spring as soon as soil can be worked — pansies tolerate frost and thrive in cool weather (45–65 degrees F). Also excellent as a fall-planted crop (in zones 6+ they can overwinter and bloom very early in spring). Decline and die in summer heat; replace with warm-season annuals.
Soil & site
Moderately fertile, well-drained soil with good organic matter. pH 5.4–5.8 (slightly acidic preferred). Work in compost. Consistent moisture is important — pansies suffer in dry conditions.
Feeding
Light to moderate feeder. A balanced fertilizer at planting, then a liquid fertilizer every 2–3 weeks during active growth. Too little nutrition results in small flowers and slow growth.
Common problems
Aphids, slugs, and snails (they love pansy foliage). Powdery mildew in humid, warm weather. Pansies are cool-season plants that decline in summer heat — plan accordingly. Spider mites in hot, dry conditions. Downy mildew.
When to harvest
Harvest flowers when fully open for use as edible garnishes. For cut flowers, harvest when buds show color but are not yet fully open to maximize vase life. For seeds: let some flower heads dry completely on the plant — seed pods are green, three-lobed capsules that dry and split open. Seeds are tiny and ripen quickly after pod splitting.
How to harvest
Pinch or snip flowers at the stem base. Deadheading spent flowers vigorously is essential for continued blooming. For seed collection, watch pods carefully — they split suddenly and throw seeds. Bag a few pods with a paper bag tied around them before they split.
Storage & use
Fresh flowers: use within a day for garnishes. Keep cut stems in water for up to 5 days. Edible flowers have a mild, slightly minty flavor. Use as garnishes for salads, desserts, and drinks. Crystallize flowers with egg white and sugar for a decorative, long-lasting edible decoration.
