When to plant
Start indoors 8–10 weeks before last frost. Transplant after all frost risk has passed. Long-season crop (60–80 days to harvest). Very productive in summer heat — one plant can yield dozens of peppers per week at peak production.
Soil & site
Fertile, well-drained soil. pH 6.0–6.8. Work in compost. Warm soil is important — shishito peppers love heat. Consistent moisture is important for steady production.
Feeding
Moderate feeder. Balanced fertilizer at planting, then a lower-nitrogen fertilizer once flowering begins. Monthly feedings through the season. A tomato-type fertilizer works well for all small peppers.
Common problems
Aphids, thrips, and spider mites. Blossom end rot from inconsistent watering. Like all peppers, very frost-sensitive. Slow to produce in cool weather — wait for genuinely warm conditions before planting out.
When to harvest
Harvest when peppers are 3–4 inches long, bright green, and slightly wrinkled — this is the traditional Japanese stage. For red (fully ripe): wait until they turn red, which is sweeter but less commonly used. One in every 10–15 peppers may be surprisingly hot, even within the same plant.
How to harvest
Snip or twist peppers from the plant, leaving a short stem. Harvest frequently when pods appear — the plant produces continuously if kept picked. Unlike bell peppers, shishito should be harvested relatively small. The entire pepper is edible, including the seed.
Storage & use
Refrigerate fresh peppers for 1–2 weeks. Best eaten soon after harvest — flavor diminishes with storage. Classic preparation: blister in a hot skillet or under a broiler in a single layer until charred in spots, toss with flaky salt. Also excellent roasted whole or in tempura.
